After I run it through the ice cream maker I then put it in the freezer. It then freezes into an unscoopable brick. I have to leave it on the counter for at least 10 minutes before I even try to scoop it out. What am I doing wrong?

You are doing everything right Darlin'! Fresh, homemade ice cream is supposed to freeze hard. Leaving it out for 10 minutes to soften it is part of partaking in a very special dessert. Think about it...Hagan Daz and Ben & Jerry's, natural, real ice cream is always hard frozen. The best is always hard frozen. Soft ice cream means additives...don't go there, unless it's fresh gelato, real, soft and no additives! Just plan 10 minutes ahead and all your friends and family will be thanking you for real fresh ice cream!
