Can you substitue soy milk in a regular ice cream recipe?

I've been a vegetarian for a long time, but I just decided to go vegan. I'm in 8th grade, and my science teacher is doing a project where we make ice cream. We have to find the recipe ourselves and bring in the ingredients Thursday (January 8, 2009).

Can you just use soy milk instead of regular milk in normal homemade ice cream recipes? Does it taste any good? Or do you need a different recipe all together? Anyone know any good ones?
