I need a chocolate cookie recipe no nuts no chips that will be chewy but still hold up as an ice cream sandwich cookie...please no recipe for the wafer type cookie that comes on ice cream sandwiches you buy in stores Thanks

Answer
Google up the recipe for Whoopie Pies, a famous Pennsylvania Dutch treat, and you'll find a good chocolate sandwich cookie. Softer than the wafer-type, more like a thin cake. You can make them any size you want from Oreo size on up to pancake size - the Penn. Dutch put fluffy white frosting between two of them, they would work fine with ice cream. They are durable enuf to be a favorite lunchbox treat for the kids & daddies - so try them for your ice cream sandwiches.
