Does anyone know of a really great sugar-free vanilla ice cream recipe for diabetics??
My dad wants me to make homemade ice cream for him, but it cannot have any sugar.

Google low carb vanilla ice cream and there are a few recipes that look promising.
I hope you know to be wary of anything labelled a 'diabetic' food as most of the time it is still very high in carbohydrates. A truly diabetic food has to be low-carb.
