Our chem class made ice cream by putting ice cream mix in a bag and rolling it around in ice and rock salt. why must the ice cream mix be constantly mixed?

mixing introduces air to the mixture of ingredients used for making ice cream. If it wasn't mixed when freezing, it would simply turn into an ice cube of ice cream.
