If they only have 2-3 soft serve machines to make it at all, then they just make 2-3 flavors at a time. Just because you see 2-3 machines in the front though doesn't mean that they don't have a bunch in the back. I know that it only takes about 20-40 minutes to make a batch of soft serve at home, since I have a little machine so I don't think it would be that hard if you had commercial quality machines.
