1 clove garlic, halved
1 (12-ounce) bottle hard apple cider
2 tablespoons lemon juice
1 tablespoon brandy
Pinch kosher salt
5 ounces (2 cups) Gruyere, grated
5 ounces (2 cups) Smoked Gouda, rind removed, grated
1 tablespoon plus 1 teaspoon cornstarch
1/4 teaspoon curry powder
Several grinds fresh ground black pepper
Rub inside of fondue pot or heavy small saucepan with garlic. Pour cider into pot. Add 1 tablespoon of lemon juice, the brandy and salt and bring to a simmer over medium heat. Meanwhile, grate the cheese and toss well with the cornstarch in a large bowl. When the cider just begins to simmer, gradually add the cheese a handful at a time, allowing each addition to melt completely before adding the next. Continue adding cheese and stirring until all cheese is incorporated, about 3 minutes. If mixture starts to bubble, reduce heat to low. The mixture is ready when creamy and easily coats the back of a spoon. Stir in curry powder and pepper. If cheese seems stringy, add some or all of the remaining lemon juice. Move fondue pot to alcohol warmer, and keep stirring during service. A variety of breads, from pumpernickel to rye to bagel chunks can be skewered and dipped as can cauliflower, broccoli, mushrooms and potatoes. (Soften all vegetables by blanching briefly in boiling water then chilling.) Crisp fruits such as apples make great fondue fodder, as do cooked meats and sausages. Even soft pretzels make for good dipping. If any fondue is left over, cover with ice water and refrigerate, pour off water and reheat over low heat.

1/2 pint whipping cream
1/2 cup caramel topping
3 tablespoons Torani hazelnut syrup or favorite liqueur
Place all ingredients in a ceramic fondue pot over low heat. Stir constantly until the mixture is melted and smooth. Do not allow to bubble. Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Some suggestions are strawberries, bananas, apples, grapes, cherries, pound cake, marshmallows, raisins and shelled nuts. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

I have a cuisinart ice cream maker. Immediately after the ice cream is made it is soft, but after freezing it it becomes hard and gritty. Is it that the machine is inherently deficient or are there ingredients that the commercial makers include?

let the mix sit in the fridge over night then churn it. it sounds like you have too large ice crystals. you have to churn it first then switch to a higher speed to whip in air.

My favorite is the Rival White Mountain 6-Quart F69206-X because it makes 6 quarts versus 1.5 to 2 for the other brands. It requires rock salt and ice but the outcome is the best ever.
Second favorite is Cuisinart ICE-20 for custard-type ice cream but it only makes about 1.5 quarts. It requires pre-freezing.

When I was a kid I accidentally bit down on a sugar ant that had been trapped on my cereal spoon. It tasted foul and bitter. I soon noticed that when crushed, the ants have a smiliar aroma to their taste. I've been told its a type of acid in their bodies. What is the name of that acid?

I made frozen drinks with a rotary electric ice cream/sorbet maker. There was an awful metallic taste in my slushy as I neared the bottom. After cleaning out the metal-lined insulated bowl, I noticed some of the cooling liquid had collected in the bottom. Should I be concerned that I may have ingested a carcinogen or toxin?
It is an insulated bowl that is filled with a clear fluid. Somewhat like a thermos filled with liquid rather than air. The bowl is placed in the freezer to cool. It is then placed on a unit which spins it while a stationary plastic blade stirs the icecream/sorbet/yogurt/etc. Here is the website with the actual product.

Oh, the liquid/gel evaporated overnight and left a crystalline formation behind. Much like frost on a window. maybe it was ethanol or somesuch... however, there was no appreciable odor, just a bitter taste.

A wooden one, obviously !
I would say go for something like the Forth railway bridge, that is constructed of angles, rather than the Golden gate bridge, all those suspension ropes are going to be tricky to make look right! Also avoid any bridges that have arcs in them, they will not look right made of angled pieces.

Why does my ice cream always turn out like frozen whipped cream?

My ice cream always turns out fluffy and whipped in my ice cream maker. It doesn't freeze well and doesn't have a dense texture to it. I am using an electric ice cream maker. Has anyone else run into this problem or does someone know how to fix it?
I am using an electric ice cream maker, with 1 quart of capacity. I am using 2 cups heavy cream and 1 cup whole milk. The ingredients are think enough, but how do I prevent it from whipping?



Answer
It sounds to me like too much air is being whipped into the ice cream or you are using ingredients without an appropriate cream content. The heavier your milk, the heavier the ice cream. skim milk, 2 percent, etc. will make light ice cream. You want Heavy whipping cream, Evaporated milk or whole milk as the base. Also, I have heard a friend complain that the pre packaged ice cream "mixes" that she has used in her electric ice cream maker really sucked. She thought it was not ice creamy like at all and in fact tasted like sweetened air. Try some old fashioned recipes like in a good OLD cook book, or look up some old fashioned recipes on the internet.

Here are some tips:

Hints for Making Better Ice Cream
The consistency of ice cream may vary from batch to batch. Several factors that will affect the firmness or consistency of ice cream are the recipe used, how hot or cool the day is, size of ice, temperature of the salt water, and temperature of the mixture before it is churned.

Too Soft - If after 20 minutes of steady cranking on manual models you feel no drag or tightening, or if motor on electric model continues to run freely after 30 minutes, then the salt water is not cold enough, therefore, the ice cream is not hardening. You should add another 3 ounces of table salt or 5 ounces of rock salt. This will begin to reduce the saltwater temperature and cause the ice cream to harden. As the ice melts, you may have to continue to add ice and salt until the ice cream is the consistency of mush.

Too Grainy, Icy or Hard - If the cranking mechanism becomes too hard to turn in less than 20 minutes on manual models, or if motor stalls in less than 20 minutes on electric models, resulting in coarse or an inconsistent texture of ice cream, the saltwater became too cold too fast. In this case, you used too much salt and the ice cream froze too fast on the edge of the can, and/or you did not used crushed ice.

Recipe Hint - Preparing the ice cream mixture the day before makes smoother ice cream and increases the yield.

Recipe:
Old-Fashioned Homemade Ice Cream
6 eggs
2 cups sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
13-ounce can evaporated milk (1-1/2 cups plus 2 tablespoons)
1 gallon whole milk
chipped ice
rock salt
In a large mixing bowl, beat eggs. Add sugar gradually, stirring constantly. Add salt, vanilla and canned milk. Add about a pint of the fresh milk and mix.

Pour mixture into ice cream freezer can. Add enough of the remainder of the milk to fill can to the middle of the top board of dasher. (If the freezer can has a "fill" line on it, fill no higher than that line.)

Assemble the ice cream freezer. Add alternating layers of chipped ice and rock salt to barrel around freezer can. Crank freezer until ice cream begins to freeze (cranking will become harder as ice cream freezes), adding more ice and salt, as needed. When handle becomes difficult-to-impossible to turn, remove turning mechanism, and carefully remove top from freezer can; remove dasher. Replace top. Cover can with more ice and salt. Cover ice with an old towel, allowing ice cream to "cure" for at least 1 hour. If yours is an electric freezer, follow manufacturer's directions, but the curing step is essential.

Makes about 5 quarts of ice cream.

I am looking to make a naturally low fat ice cream without using artificial ingredients or sweeteners. I am using an electric ice cream machine with a freezer bowl.

Eating Well Chocolate Ice Cream
3 cups 1% low-fat milk
1/4 cup dark corn syrup
2 tablespoon brown sugar
2 large egg yolks
2/3 cup Dutch-process cocoa powder
2 tablespoon cornstarch
1 ounce bittersweet chocolate
1 tablespoon coffee liqueur
2 teaspoon vanilla extract
1 1/2 cup Marshmallow Fluff

1. In a large heavy saucepan, combine 2 1/2 cups milk, corn syrup and brown sugar. Heat over medium heat, stirring to dissolve the sugar, until steaming.

2. Meanwhile, in a medium-sized bowl, whisk together egg yolks, cocoa, cornstarch and the remaining 1/2 cup cold milk until smooth.

3. Gradually whisk the hot milk into the egg-yolk mixture; then return to the pan. Cook over medium heat, whisking constantly, until the mixture boils and thickens, about 3 minutes. (Because the custard is thickened with cornstarch, it will not curdle when it boils.)

4. Remove from the heat, add chocolate, and stir until melted. Stir in coffee liqueur or brewed coffee and vanilla.

5. Transfer the custard to a large clean bowl and place a piece of wax paper directly over the surface to prevent a skin from forming. Cool completely. Add Marshmallow Cream and mix with a whisk until as smooth as possible. (The mixture will be a little lumpy; lumps will break down during stir-freezing.) Chill until cold.

6. Pour into the canister of an ice cream maker and freeze according to the manufacturer's instructions. Number of Servings: 6

PEANUT BUTTER CHOCOLATE CHIP ICE CREAM
1/4 cup sugar
3 large eggs
1 cup skim milk
1/2 cup creamy peanut butter (natural)
1 cup Fat Free Sweetened Condensed Milk
1/2 cup Fat Free Half & Half
2 tsp Vanilla
½ cup mini chocolate chips
In a medium mixing bowl beat the sugar into the eggs until slightly thickened and pale yellow. Set aside.
Bring the milk to a simmer in a medium saucepan over low heat. Slowly beat the hot milk into the eggs and sugar. Pour the entire mixture back into the pan and place over low heat. Stir constantly with a wooden spoon or whisk until the custard thickens slightly. Do not let the mixture boil or the eggs will scramble.
Remove from the heat and beat in the peanut butter with a whisk. Pour the hot custard through a strainer into a large clean bowl. Allow to cool slightly, then whisk in the condensed milk, half & half and vanilla.
Cover and refrigerate until cold or overnight. Pour into ice cream maker canister and freeze according to the manufacturer’s directions. Add 1/2 cup mini chocolate chips when mixture is semi-frozen in ice cream maker.
Also, you may want to pick up the book "The Ultimate Ice Cream Book" or the Ben and Jerry's Ice cream and Desserts book. I have heard good things about both. I think the "Ultimate" book has a good vanilla lo fat recipe that makes a good starting point.

Low Fat Peach Ice Cream Recipe
1 (8 ounce) can fat-free condensed milk
1 cup sugar
1 pint low-fat whipping cream
1 pint fat-free half-and-half
2 cups chopped peaches
skim milk
In bowl add all ingredients except fruit.
Mix until sugar is dissolved.
Put in ice cream machine, add fruit.
Fill with milk to fill line.
Process in ice cream machine.

Ok so there's this doll like a kelly sized Barbie and she wheres a hard plastic skirt and when you open it there would be a cake store in one of them and another would have a ice cream shop or a skating rink. When your done playing with it you can close it up and place her on the top of the skirt. I've been looking for them everywhere. please help me. TY ^.^

This ice cream maker is well made for the price and it is much quieter than my older unit with the plastic ice bucket. The ice cream is more firm when it is done than with some of the other makers I have used. It makes enough ice cream for the neighborhood at one time. I bought this item on 5/28/2009, Read all the instructions, few days later I tried it out, only thing was I did not have enough ice to fill it all the way up, but it worked pretty good for a first time.
The next weekend I bought a big bag of ice and more half& half & whipping cream and made up a big batch of butter pecan ice cream. Everybody raved at how rich& creamy it was and so delicious!!! I make ice cream about every 2 weeks now takes about 20-25 min. once its all in the maker.

hi i was wondering if there is ANY WAY you can make ice cream or gelato without an ice cream maker. because i want to make gelato, and ice cream and i dont want to buy an ice ceam maker becuase i will only use it once. ok.. blah blah iom talking tooo much. and can you give me recipes that dont need an ice cream maker?

Worlds Simplest Ice Cream Maker:

(this is not recomended for batches bigger then a couple of servings)

What you need:

- 1 Large ziplock bag
- 1 smaller ziplock bag (must be small enough to fit inside the large one with some extra space)
- crushed ice
- salt (corse salt works best, but table salt will work in a pinch)
- ice cream mix (you can find many good recipes on the internet)

* make sure that both bags have a good seal on them*
*you might want to use gloves as the ice cream maker will get very cold*

Procedure:

1. fill the smaller bag with the ice cream mixture and seal it tightly. (be sure to not fill it to full as you will be mixing the ice cream in the bag)

2. Place the smaller bag into the bigger bag along with some of the ice and 2-3 tables spoons of salt. (put in as much ice in the bag as you can with the bag still being flexible)

3. Wiggle, twirl, gently squish, or otherwise mix the whole thing with your hands untill the ice cream is the consistency of the ocecream is as you like it. ( as you mix it, dont be to rough because if eith bags open up you will have a mess on your hands. And also be sure that the inside bag gets mixed well as it could turn into solid ice.)

4. Remove the small bag from the big one, wipe off the top of the bag before you open it (to remove the salt), and enjoy.

I bought a quart of soft-serve ice cream from a local stand. I would like it to last about 2 months without it becoming gritty, which it will typically do after it is kept in the freezer for awhile. Would it be possible to vacuum seal it in a food-saver container to prevent it from becoming gritty and also decreasing the amount of freezer burn?

i'm in the market for a new iphone 4 case and i have been looking on etsy for sometime.

but there are no reviews on it on etsy, and i've seen some on amazon that are roughly similar and have really bad reviews. i REALLY like the ice cream sandwich case.
anyone have any thoughts/experience/recomendations?

Don't buy it from Etsy, because it is not a handmade item.

I am sure that it is the same case that is being sold on Amazon. I would find another case if the reviews are bad.
