I dont have a ice cream maker, or ice cream on hand. I was wondering if maybe you had any suggestions. Also, would icing made with powdered sugar be good on top?

Actually, a topping is not absolutely essential. A well-made crumble can stand alone. :)
If you're set on a topping, however... Since apple crumble is a 'solid' dessert, adding icing might be a bit too rich, especially if it's a buttercream icing. However, a boiled icing (a.k.a. Italian meringue, I've recently learnt) would be lighter (drop me an e-mail if you need a recipe -- would be glad to share it). You could also try adding a plain meringue to the top of the crumble, giving it a quick bake in the oven just as you would for a lemon meringue pie. However, I don't think I would risk trying the latter unless the dessert is going to be eaten directly as the moisture from the meringue would probably soften the crumble topping if allowed to sit.
