Pandesal

500 g bread flour
7 1/2 g salt
50 g sugar
17 1/2 g yeast
300 ml milk
1 egg
40 g margarine
breadcrumbs, for rolling the dough with

Preheat oven 350ºF.
Knead all ingredients 10min, adding more flour as needed to achieve a tacky dough.
Place in floured table, shape into a smooth ball. Bulk ferment for 1 hour .
Divide into 3, make into a fat log, rest 30 min .
Roll into breadcrumbs, rest 35min .
Cut about 2", reroll in crumbs. Proof 25min.
Bake 15-20min.


Pan De Sal

INGREDIENTS
2 cups warm water (110 degrees F/45 degrees C)
2 teaspoons active dry yeast
1/3 cup white sugar
1/4 cup vegetable oil
1 1/2 teaspoons salt
6 cups all-purpose flour
DIRECTIONS
Put the warm water in a small mixing bowl and add the yeast and 1 teaspoon of the sugar; stir to dissolve. Let stand until creamy, about 10 minutes.
In a large mixing bowl, combine the remaining 15 teaspoons of sugar and the oil and mix until smooth. Add the salt, 1 cup of flour and the yeast mixture; stir well. Add the remaining 5 cups flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl.
Turn the dough onto a lightly floured surface and knead until smooth, supple and elastic; about 10 minutes. Lightly oil a large mixing bowl, place the dough in it and turn to coat the dough with oil. Cover with a damp towel or plastic wrap and let sit in a warm place until the dough has doubled in volume; about 1 hour.
Turn the dough onto a lightly floured surface and divide into 4 equal pieces. Form each piece into a cylinder and roll out until the 'log' is 1/2 inch in diameter. Using a sharp knife, cut each 'log' into 1/2 inch pieces. Place the pieces, flat side down, onto two lightly greased baking sheets. Gently press each roll down to flatten.
Preheat oven to 375 degrees F (190 degrees C).
Cover the rolls with a damp cloth and let rise until doubled in volume, about 30 minutes.
Bake at 375 degrees F (190 degrees C) until golden brown, about 20 minutes.

Filipino Pandesal Bread ( Bread Machine )

1/2 cup water
1/4 cup evaporated milk
1/2 cup milk
1 egg
1/2 cup sugar
3/4 teaspoon salt
5 tablespoons softened butter
1 tablespoon oil
4 cups flour
3 teaspoons yeast
breadcrumbs

Combine the water, evaporated milk and milk and heat in the microwave for 35 seconds. Run tap water over the egg for 30 seconds to warm it.
Add all ingredients (except the bread crumbs) in the order suggested by the manufacturer.
The dough is supposed to be somewhat sticky (when I made this recipe, it was not sticky but it turned out well anyway).
Spray two baking sheets with non-stick cooking spray; preheat oven to 375 degrees.
When the dough is ready, scoop out a small amount (about the size of an ice-cream scoop) and roll in bread crumbs in an oval shape; place on baking sheet.
Cover and leave to rise in a warm place until doubled.
Bake for 10 to 15 minutes, until golden brown.
