What are the names of the groups ice cream can be put in?

Hello everyone,

Well, I am doing a project on the periodic table where I choose a topic and I create my own periodic table. Obviously, I have chosen ice cream as my topic and I have all of my flavors but I have trouble putting them into "families" aka groups.

For example: Vanilla ice cream is under the group of the Classics.

Keep in mind I have to create 8 groups... It would be great if you could figure a few names for eight groups.

There are plenty of Ice cream types you can find from ice cream manufacturers such as chocolate dream, chocolate ripple, Vanila dream, Fruit and nut fiesta.

There are many others including faluda magic, chocolate wonder, strawberry sensation, Mango ripple.

How to make homemade ice cream soft?

I'm making ice cream out of Ensure nutritional drinks for a relative with Alzheimer's and dysphagia (trouble swallowing, especially thin liquids).

But it's too soft when it's just made, and too hard when it's been in the freezer for a while.

What can I do to make the ice cream have the soft and fluffy texture of store-bought ice cream? Perhaps adding some magic ingredients, or processing it differently to add more air? I'm using a Cuisinart ICE-20 ice cream maker.

Alton Brown (food network) made sorbet on one of his episodes and said that putting a tad of alcohol in it will keep it from freezing rock solid. Since Ensure isn't really cream, acts more like water, then maybe it would work. Here's the link to the recipe he used.

You could always write to the Food Network and ask them to devise a recipe for all the people who cannot enjoy regular ice cream.
