Where can I find info and recipes for a small Rival ice cream maker ?

I bought a Rival soft serve ice cream maker from a yard sale a few weeks ago.Where can I find out info on it ? I also want to find recipes for ice cream,sorbets,and sherberts.Thanks to all answers in advance.

soft served ice cream basic ingredients. Help me! I need to make my own than buy the pre-mixed powder?

I have an soft served ice cream maker. I want to find out about the raw ingredients since powder mixes are expensive.


Answer
Basic vanilla - however - add whatever you like (fruit or chocolate etc....)

2 cups scalded milk
1 tablespoon flour
1 cup sugar
1 egg
1/8 teaspoon salt
1 quart thin cream
2 tablespoons vanilla

Mix flour, sugar, and salt, add egg slightly beaten, and milk gradually; cook over hot water twenty minutes, stirring constantly at first; should custard have curdled appearance, it will disappear in freezing.
When cool, add cream and flavoring; strain and freeze.

How to make homemade ice cream soft?

I'm making ice cream out of Ensure nutritional drinks for a relative with Alzheimer's and dysphagia (trouble swallowing, especially thin liquids).

But it's too soft when it's just made, and too hard when it's been in the freezer for a while.

What can I do to make the ice cream have the soft and fluffy texture of store-bought ice cream? Perhaps adding some magic ingredients, or processing it differently to add more air? I'm using a Cuisinart ICE-20 ice cream maker.

Alton Brown (food network) made sorbet on one of his episodes and said that putting a tad of alcohol in it will keep it from freezing rock solid. Since Ensure isn't really cream, acts more like water, then maybe it would work. Here's the link to the recipe he used.

You could always write to the Food Network and ask them to devise a recipe for all the people who cannot enjoy regular ice cream.
