Now that berry season is in full bloom, I'm looking for people's favorite ice cream recipes for my ice cream maker...I made blueberry yesterday, and it's fantastic. Do you have a favorite? Something special or unique? Please share!!

Answer
I love a mix of raspberries and strawberries with a little Chambord mixed in. I use about 2 Tbslp of the liqueour in a standard sized recipe, and it seems to give it just a touch more depth of flavor.

I also love raspberries with chocolate chips...YUM!

I add either of these to just a standard sweet cream type mixture, such as that in the Ben & Jerry's book. I think I'll go make some now...I wonder what's on hand?

What's the brand? It should have come with a recipe book...heck, my waffle iron came with a recipe book! Go on the brand's website, do a search there for recipes. It's hard to just give a recipe as different machines process ingredients differently.

Why do home made ice-cream recipes state the mixture needs to be heated before putting into an ice cream maker?

I've recently bought an ice cream maker, and i've noticed most of the recipes (in various different books and places online) it says to heat all the ingredients before cooling and putting into the ice cream maker.

Why does the mixture need to be heated? Will the recipe not work if I just put all the ingredients in a bowl cold and mixed together?

Thanks!

Answer
It's called pasteurization. To kill any possible harmful bacteria.
