What is the best way to keep a container of ice cream fresh in the freezer?

I just did a tour of the Blue Bell ice cream factory in Brenham, Texas -- they said to cover the ice cream with plastic wrap before replacing the lid and it will give a nice tight seal. I think it would also help to press the wrap down to the level of the ice cream to push the air away from the surface of the ice cream to prevent freezer burn.

What is the difference between churning ice cream and just freezing it?

So I found an ice cream recipe that says to churn the ice cream after its mixed, but I don't have an ice cream churn. How will it taste if I just put it in a container and freeze it in the freezer?
