any tips on making home made ice cream?

first i'm trying to make ice cream with out the cream (does this work) and second after i freeze it in my ice cream maker and i put it in my normal freezer it turns all icy and i can't even get my ice cream scoop to get into it.( i can't even cut it with a knife) what is my problem???

Much depends on the device you are using to freeze the ice cream. For the old hand-cranked freezer, chilled with a mixture of salt and ice, the keys are to have a good custard base (see a cookbook for this), and a fair amount of cream so that the butterfat content is high, and then crank steadily until it starts to freeze. Once it starts to stiffen, crank as fast as you can to entrain as much air as possible into the mix and keep large crystals from forming. When it is no longer possible to turn the crank, everybody involved in the cranking gets a bowl, the agitator is pulled, and whatever is left is consigned to the freezer. Yum!
